I have been making these sweet potato quesadillas for a long time now. This combination mix is by far my best combo, and i have tried a few different quesadillas over the years.
That sweetness from the sweet potato and the saltiness from the cheese is a great mix. Defiantly one to try if you fancy some Mexican food.

3 sweet potatoes
Half green pepper
Half red pepper
1 small red onion
Small bowl of sweetcorn
2 tablespoons of fajita spice mix
3 green chillies
Cut up and boil the sweet potatoes. In a pan heat up some oil, add in the onions, let them soften, add in the peppers and let them cook, add in the fajita spice mix, green chillies, salt and pepper to taste, then add in the sweetcorn and cook for a further 5 mins.
In the mean time the sweet potato should be done, so drain the water and mash with a potato masher. Once mashed and in the veg mix and mix altogether.
Then place the flour tortilla on a flat surface and spread some of the mixture on half of the tortilla, sprinkle on some cheese and fold the other half over. Then in a pan heat some oil and place the quesadilla on top and cook both sides until golden brown.
Serve with some guacamole and sour cream on the side.
