My go to dinner option, that is light and tasty and doesn’t take forever to make.
When ever I don’t know what to make, or don’t want to spend too much time in the kitchen over a hot stove. I go with my tasty chickpea and added veg pancakes. They are also a very good source of protein, which comes from the chickpea flour.
These can also be good as a post workout dinner too, as this is needed to repair your muscles and all the beating they have endured, during your workout and will help in not feeling too much pain the following day.
I always add some veggies in there. you can add most things in there, but I try not to add too much to them. It is your preference of what you like, if you like more veggies added, then you can do so, it depends on every individual preference.
Cold water (depending on your consistancy preference and how many you want to make)
Salt (to taste)
2 tablespoons of olive oil
Prep all the veg individually. Then in a large bowl add in the chickpea flour, along with the salt, cumin, garlic, chilli, lime juice, olive oil and small amount of water to start with. Then whisk all together and add in more water as you see fit. once you feel you have the right consistency of the batter, then you are good to go.
